In the heat of a Pakistani summer, a Lassi is more than a drink; it is a thermal reset. While the traditional salted version is a staple of roadside stops, the Sweet Mango Lassi is the king of the home table. We’ve recalibrated this classic for the US kitchen, solving the "melt-down" problem by using pre-frozen milk-water cubes that preserve the velvety texture until the very last drop.

Ingredients

The Core
1 cup Fresh Mango (chopped) or Canned Mango Pulp (Alphonso preferred)
1 cup Plain Greek Yogurt (Full fat provides the best "recalibrated" texture)
1/2 cup Cold Milk (adjust for desired thickness)
1–2 tbsp Honey or Sugar (depending on the sweetness of the fruit)

1/4 tsp Ground Cardamom (optional, for heritage depth)

Chef's Note: To prevent flavor dilution, stop using regular water ice. Instead, prepare a tray of Recalibrated Ice Cubes using a 1:1 ratio of whole milk and water. This "Milk-Ice" provides the necessary chill during the blend but melts back into the lassi as a creamy component rather than plain water. For a laboratory-smooth finish, blend the mango and yogurt before adding these cubes.

Directions

The Prep: Mix 1/2 cup whole milk with 1/2 cup water and freeze in an ice tray at least 4 hours before preparation.

Add the chopped mango (or pulp) and the Greek yogurt to a high-speed blender.

Blend on medium-high for 30 seconds until the mixture is a vibrant, uniform orange.

Add the honey/sugar and the ground cardamom.

Pour in the cold milk while the blender is running on low until you reach your preferred "sipping" consistency.

Drop in 4-6 of your Recalibrated Ice Cubes and pulse 3-4 times—just enough to chill and slightly fracture the cubes without turning the drink into a slushy.
